[gmx-developers] Update to documentation build

Hello gmx developers

I have just pushed a change to the documentation build in master that 
required a change to the underlying build image.

As those changes are incompatible with older versions, you will see the 
documentation builds fail for your merge requests until you have rebased 
on top of https://gitlab.com/gromacs/gromacs/-/merge_requests/1055.

I hope I'm not causing too much trouble with this for you :)
